A coffee roasting company is where the raw coffee beans are brought in and put through a large or not so large coffee bean roaster.   The roaster roasts the coffee beans for a specified amount of time. This time frame determines the strength of the flavor.   The longer coffee beans are roasted, the stronger the flavor. However, contrary to popular thought, the strength of the flavor does not equally correlate to the strength of caffeine.   The caffeine found in the coffee beans actually gets released from the beans as they are roasted. Therefore the longer coffee beans are roasted (and the darker they turn in color) the less caffeine is left in the bean.   

So if this is the case, why is espresso considered more caffeinated than a regular cup of java? The answer is because the espresso is concentrated and a regular cup of coffee is not.  But if you measured the amount of caffeine in one espresso bean to a single lightly roasted coffee bean the caffeine would actually be less in the espresso and greater in the lightly roasted coffee bean.  It’s a hard one to grasp I admit, but this is the case.  So if you take the “Morning Light” blend and think because the flavor is faint you are getting less caffeine think again.   Remember the flavor comes from the roasting of the bean, not the caffeine.   

A few years ago, a local coffee roaster was kind enough to give my husband and myself a local tour of his warehouse where he roasted his coffee beans. By asking questions we learned a few more things that you might benefit from as well.   Here they are:

 

1. Oily beans mean fresh beans except for espresso/super dark roasts. Oily is good. For espresso it is the opposite. 

2. Coffee names might be the same from brand to brand, but the tastes are not.   This is because it is up to the roaster or company who hires the roaster to set the roasting times for each type of bean.   For instance, if I have my own coffee company and one of my coffees is called Breakfast Blend, I can choose to roast them for X amount of time while my competitor who also has a Breakfast Blend roasts their beans for Y amount of time.  Also, the bean itself may be from another part of the world which can also affect taste. Maybe I order my Breakfast Blend beans from Ethiopia while my competitor orders them from Sumatra.  The roasting brings out the flavor of that particular type of raw bean and remember all beans are not the same.

3. Store the beans in dark cool places, not where it is hot and exposed to light. The heat and sun will make the beans go stale before they should.

There is a lot to learn about the coffee trade. From the growing and harvesting of the beans in far away lands, to the man who roasts the beans just 20 minutes from where you live or shop, to the store where you purchase them, to the kitchen where you store them, to the coffee maker where you brew them, to the cup where you can smell them, to your lips where you taste them. The more you learn about the coffee making process the more you will respect and appreciate the coffee experience. I encourage you to support your local businesses who service your community with freshly roasted coffee. You won’t regret it!
